01 / ABOUT THE PLACE

About this place

At Tonchin, choosing your noodles is the first decision: go for wavy or straight. Some diners who opted for wavy noodles have noted how well they held the soup and back fat. The menu describes a broth made by slowly simmering pork, chicken, vegetables and other ingredients, then seasoning it with dark soy sauce. It comes with three-layer pork belly chashu, bamboo shoots, a seasoned boiled egg and nori. Reviews describe the ramen as rich but not too heavy, making it a good fit for those after a balanced soy-sauce-and-tonkotsu flavour rather than an especially intense pork-bone broth.

To change things up as you eat, add a little garlic, chilli bean paste or spicy mustard greens from the table. One diner found the mustard greens quite hot, so it may be best to start with a small amount. A reviewer who paired ramen with rice reported that it was cooked so the grains stayed distinct, and enjoyed eating it with chashu.

For a different flavour, the menu also offers gyoton ramen, miso ramen and tsukemen. Gyoton combines bonito-infused oil and fish stock, with tender-tip bamboo shoots and fresh wakame seaweed from Sanriku. The miso ramen is made with the restaurant’s own blend of house-prepared miso and is served with corn as a standard topping. Tsukemen comes in three styles: tonkotsu soy sauce, miso and gyoton. The tonkotsu soy sauce and miso versions use fried spring onion oil, while the gyoton version is made with a special sweet vinegar and bonito-infused oil.

Some diners have stopped in for ramen or tsukemen after drinking in Ikebukuro. The West Exit branch is open 24 hours a day, every day, so you can choose between the classic Tokyo tonkotsu, customised with your choice of noodles and condiments, or a bowl of gyoton or miso.
